My lovely man has just arrived back from Canada, and with all the talk of Maple Syrup I was inspired to experiment with some Maple last night. I do have a sweet tooth, but on account of having gorged myself on terrible food since Uni started, I wanted to make something a little more wholesome than a dessert!
A little Maple flavouring goes a long way, but feel free to add more if you want them deliciously sticky and sweet. You could substitute some extra dates and maple syrup for the coconut oil to make them sticky enough to roll into balls, but I preferred them with a little coconut oil to combine them better into a nice dense bar. These make a lovely lunch box snack, but beware that with the coconut oil they can melt a little if they get too hot!
3/4 cup Cashews
3/4 cup Almonds
1 1/2 cups Dates
3/4 cup Desiccated Coconut
Small handful Flax seeds
2 tablespoons Chia seeds
2 teaspoons Maca Root Powder
2 tablespoons Organic 100% Maple Syrup
3 tablespoons Coconut Oil
1. Process nuts and dates until in small pieces
2. Add all other ingredients, except for coconut oil, and blend until thoroughly mixed
3. Finally add in solid coconut oil and blend until just combined
4. Pack into a shallow container or tray and freeze until solid
