You asked for it, and how could I refuse? A good, warm berry chocolate brownie is heavenly on a cold winter’s day, such as we are currently experiencing in dreary Auckland. Can I just say- what is up with THIS WEATHER?! It makes me feel like I’m in Dunedin again, where no matter how many layers of jumpers and scarves I pile on, it seems impossible to keep warm. Many a hot chocolate and lemon toddy have been drunk in the (vain) effort to warm up, and hot soups are currently featuring rather heavily on my meal planner. It’s the perfect weather to treat yourself to a warm, dense and chewy chocolate brownie. On the flip side, it also tends to be the weather of blobbing indoors rather than making it to the gym, so even more reason to healthify this treat!
This brownie is much more fudgey than my Paleo Chocolate Brownie, and even with no nasties inside it’s barely distinguishable in flavour from the mainstream sugar-laden brownie you’ll pick up at your local. *It can be easily made vegan by substituting the eggs with your preferred egg replacer.
Oh and did I mention that it’s ready to eat in less than an hour flat? Oh and licking the bowl is a must… Okay I’m making this again tomorrow.
