Summer is finally here! That means time for leisurely weekends sunbathing at the local beach, jandals being acceptable footwear anywhere and everywhere, and most of all- ice cream! Part of the quintessential kiwi summer, ice cream is a must for any Christmas or other holiday celebration, but also just to cool off after a day in the sun. Fortunately, you can enjoy this delicious frozen treat without worrying about nutrition with this protein-packed, naturally delicious and better-for-you recipe!
This ice cream is made with a base of cashews and bananas which makes it deliciously smooth just in the blender, however, if you have an ice cream maker you can use that as per manufacturer’s instructions to achieve a more realistically ice cream texture . In any case, it is super easy to make, and you can mix and match just about any flavours you like to recreate your favourites! We recreated the famous kiwi raspberry ripple flavour with some raspberry and chia seed jelly, but you can make a chia jelly with just about any fruit under the sun, or you could try adding some cacao for deliciously smooth chocolate flavour.

Chocolate (using cacao powder to taste)

Citrus (mix lemon and lime zest through and add a little lemon juice)
